Ma's Garlic Mashed Potato Cakes


Ingredients:





2 cups left-over garlic mashed potatos
1 egg
1/2 cup flour
1 cup shredded sharp cheddar cheese
dash of cayenne pepper
salt & pepper to taste








Directions:





Mix all ingredients and heat skillet with canola or olive oil. Place potatoes, by large spoonfuls, in the hot oil and form into cakes, using the spoon. Cook over medium heat. Remove when cakes are golden brown and crispy. Drain on paper towels. Serve with your favorite sauce. We are simple folk and use Texas Pete Hot Sauce!


This is such a versatile recipe, the possibilities are endless! What about dicing a bit of ham and adding that or add some bell peppers! Mmmmm....Enjoy!
